Puff Pastry Pumpkin Lanterns!

  • 200g puff pastry
  • 250g pumpkin flesh,  deseeded and cubed
  • 100g feta cheese
  • A little milk
1.   Steam the pumpkin for 15 minutes or until softened. Mash into a puree.2.   Roll out the puff pastry and cut out an even number of circles.

3.   Grease a baking tray and lay half of the circles onto the tray – these are the bases.

4.   Spread the pumpkin over the bases and sprinkle on some crumbled feta cheese.

5.   Turn the remaining circles into scary faces by cutting out eyes and mouths – these are the lids.

6.   Place the lids onto the bases and press the edges together using a fork.

7.   Brush with milk and bake in a preheated oven (200oC / fan 180oC) for about 10 minutes.
