Scary Pumpkin Mini Quiches

For the pastry:30g butter

60g plain flour

50ml water

For the quiches:

1 eggs

50g cream cheese

85g pumpkin or butternut squash, cubed, steamed & mashed

small piece of carrot, grated

chopped chives

To decorate:

Raisins for eyes, olives or pine nuts for a nose, chives for a mouth or hair!

Makes 5/6 mini quiches

1. Mix together the butter and the flour, either with your fingers or in a food processor until it resembles breadcrumbs.2. Add a little water and mix until a soft dough is formed.

3. Wrap in cling-film and chill.

4. To make the quiches, whisk together the egg and cheese in a large bowl until thoroughly combined and bubbles form. Stir in the mashed pumpkin, grated carrot and chopped chives.

5. Grease a muffin or Yorkshire pudding tray.

6. Roll out the pastry and cut out rounds using a glass. Gently press the rounds into the muffin tray.

7. Spoon the filling onto the pastry until the hole is about ¾ full.

10. Bake for 15-20mins (fan 180, Gas Mark 5), or until set and beginning to brown

Once cooled try decorating the quiches to make scary Halloween faces!
